Mulberry Heaven

The children's song, 'Round and round the mulberry bush' should be changed to 'round and round the mulberry tree', as it grows into a very large tree indeed. Last winter while dormant, I cut the tree back to the size of a bush and was a little worried that I had killed it. But in spring the tree grew an astonishing 2 metres and has fruited profusely! I have so many berries that I have begun feeding them to the chooks.

I have come up with an easy recipe for a mulberry tart. Other types of berries may be substituted.

Mulberry tart

  • 180g unsalted butter, melted
  • 5 egg whites
  • 1 1/2 cups icing sugar
  • 3/4 cup ground almonds
  • 3/4 cup self raising flour
  • 1/2 tsp almond essence
  • 1 cup mulberries
Mix together almonds, icing sugar, flour, butter and almond essence.
Beat egg whites until stiff. Fold together with the almond mixture.
Pour into a shallow pie dish and push mulberries into the top.
Bake at 180C for 40 mins.

Shirt Dress

It began as a customer's request to refashion her husband's old designer business shirts into dresses and blouses for her little girl. The cuffs and collars were worn out but the rest of the fabric was still in good condition.

I was so pleased with the result that I went into a sewing frenzy one day and made some more dresses and blouses to stock our new online store at www.refashions.etsy.com

This style of dress will fit your child for years to come, as it can also be worn as a blouse or tunic as your child grows taller. Sizes range from 12 months to 6 years.
